Hummus

 

The delight of vegetarians and vegans everywhere. Great with soft, straight out of the oven (or at least freshly toasted) pita bread.

This recipe makes about 2.25 cups.

 

Ingredients

 

  • 4-6 cloves garlic
  • 1 can of chick peas (15.5 oz or 500 mL)
  • 2 T olive oil
  • 2-3 T lemon juice
  • 2 T tahini
  • 1/4 t ground cumin (o)
  • salt & pepper, to taste (o)

 

 

In order of appearance, add ingredients to a food processor. The garlic should be minced well before moving down the list.

If your hummus is too stiff, water can be added (1 T at a time) to soften the mixture. Refridgerate leftovers.
